  • 3-4 green plantains
  • Oil for frying
  • Salt to taste
  • 1 lb ground beef or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Optional: cheese for topping

Instructions

  1. Prepare tostones following the basic tostones recipe, but make them slightly thicker than usual.
  2. While the tostones are still warm from the first fry, use a small glass or spoon to press the center and create a cup shape.
  3. Fry the shaped cups until golden and crispy, then drain on paper towels.
  4. In a skillet, sauté onion, garlic, and bell pepper until softened.
  5. Add ground meat and cook until browned, breaking it up as it cooks.
  6. Add tomato, tomato paste, and spices. Cook until well combined and flavorful.
  7. Season with salt and pepper to taste.
  8. Fill each tostone cup with the meat mixture.
  9. Top with cheese if desired.
  10. Serve warm as appetizers or with rice and beans as a main dish.
