Sopa de Plátano (Green Plantain Soup)
A comforting soup made with green plantains, vegetables, and often chicken or beef. Known as Aguají in some regions.
Ingredients
- 3 green plantains, peeled and chopped
- 1 lb chicken or beef, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 8 cups chicken broth
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown meat if using.
- Add onion and garlic, cook until softened.
- Add chopped plantains and vegetables.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 40 minutes.
- Season with cumin, salt, and pepper.
- Cook until plantains are very tender.
- Garnish with fresh cilantro before serving.

- The soup will thicken as it cools
- Add a squeeze of lime juice before serving
