Ingredients

  • 3 green plantains, peeled and chopped
  • 1 lb chicken or beef, cubed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown meat if using.
  2. Add onion and garlic, cook until softened.
  3. Add chopped plantains and vegetables.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 40 minutes.
  6. Season with cumin, salt, and pepper.
  7. Cook until plantains are very tender.
  8. Garnish with fresh cilantro before serving.
