Ingredients

  • 3–4 green plantains
  • 4–6 cloves garlic, minced
  • 1/2 cup pork cracklings (chicharrón) or bacon, chopped
  • 1/4 cup olive oil
  • Salt to taste
  • 1/4 cup chicken or vegetable broth
  • Oil for frying

Instructions

  1. Peel green plantains and cut them into thick slices.
  2. Heat oil in a skillet over medium heat.
  3. Fry the slices until they are cooked through and lightly golden.
  4. Place garlic and salt in a large mortar.
  5. Pound the garlic into a paste.
  6. Add pork cracklings or fried bacon pieces and a little oil or broth.
  7. Pound again to combine.
  8. Add some of the hot plantain slices to the mortar.
  9. Crush them into the garlic mixture until they form a chunky mash.
  10. Continue adding plantain slices and pounding until everything is blended but still textured.
  11. Moisten with a spoonful or two of warm broth if the mixture seems dry.
  12. Shape the mofongo into a ball or mound.
  13. Serve right away with extra broth or sauce on the side.
