Ingredients
- 3–4 green plantains
- 4–6 cloves garlic, minced
- 1/2 cup pork cracklings (chicharrón) or bacon, chopped
- 1/4 cup olive oil
- Salt to taste
- 1/4 cup chicken or vegetable broth
- Oil for frying
Instructions
- Peel green plantains and cut them into thick slices.
- Heat oil in a skillet over medium heat.
- Fry the slices until they are cooked through and lightly golden.
- Place garlic and salt in a large mortar.
- Pound the garlic into a paste.
- Add pork cracklings or fried bacon pieces and a little oil or broth.
- Pound again to combine.
- Add some of the hot plantain slices to the mortar.
- Crush them into the garlic mixture until they form a chunky mash.
- Continue adding plantain slices and pounding until everything is blended but still textured.
- Moisten with a spoonful or two of warm broth if the mixture seems dry.
- Shape the mofongo into a ball or mound.
- Serve right away with extra broth or sauce on the side.
