Ingredients
- 2–3 very ripe plantains (yellow to black skin)
- 2 tablespoons oil or butter

Instructions
- Choose very ripe plantains with heavily spotted or almost black skins.
- Peel them carefully.
- Slice the plantains on the diagonal into thick pieces.
- Warm a thin layer of oil or a mix of oil and butter in a nonstick skillet over medium heat.
- Arrange the slices in a single layer without crowding.
- Cook gently until the undersides are deep golden and caramelized.
- Turn the slices and cook the other side until it is also browned and the centers are soft.
