Baked Plantains (Healthy Alternative)
A healthier version of fried plantains where ripe plantains are baked until caramelized and tender, using less oil.
Ingredients
- 3 ripe plantains (yellow with black spots)
- 2 tbsp coconut oil or olive oil
- 1 tbsp honey or maple syrup (optional)
- Cinnamon to taste
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C).
- Peel plantains and slice diagonally.
- Toss plantain slices with oil and optional sweetener.
- Arrange in single layer on baking sheet.
- Sprinkle with cinnamon and salt.
- Bake for 15-20 minutes, flipping halfway.
- Bake until golden and caramelized.
- Serve warm as a healthy snack or side.
Expert Tips
- Use very green plantains for the best texture
- Make sure banana leaves are properly softened before wrapping
- Don't overfill the pasteles or they may burst during cooking
- Let pasteles rest for 10 minutes after cooking before unwrapping
